Kanda Poha is one of my favourite easy breakfast recipes. Originally from Ud pi in India, I discovered it while living in Hubli, North Karnataka. In Hubli, Kanda Poha Avalakki was served at breakfast topped with fresh coriander, coconut and farsan or mixture. Different to the Maharashtrian version which contains fresh coconut toppings, The slightly sweeter option may be preferred. For an ideal spice & sour combo, the Aloo version can be combined with tomatoes. Both varieties together make a delicious meal!
Ingredients required for Kanda Poha:
You will need 2 cups of flattened rice,
1, Potato,
1, Onion
2, Green chillies
And a few curries leaves.
Start by finely chopping up the Potato & Onion into very small, Cubes or shredding them using a grater.
Finely chop the green chillies and set them aside.
Wash the flattened rice in a sieve to get rid, Of any dirt & impurities.
Place them on paper towels to remove any excess water before cooking.
How to prepare Kanda Poha:
Heating the Oil:
1 Heat a few tablespoons of oil in a deep pan over medium-high heat.
2 Once the oil is hot, add mustard seeds and wait for them to start spluttering.
3 Throw in the chopped potatoes and mix everything.
4 Cover the pan with a lid & reduce heat to low-medium heat and cook for about 10 minutes or until potatoes are lightly browned.
5 Next, add the onions and green chillies to the pan along with a pinch of salt stir and fry everything together for 2-3 minutes before adding the curry leaves.
Sauté Onions, Potatoes and Spices:
1 Pour a few tablespoons of oil into the pan, Then add mustard seeds & allow them to start spluttering.
2 Once this is done, throw in the chopped potatoes and mix everything.
3 At this point, reduce the heat to low-medium and cover the pan with a lid. Cook for about 10 minutes until the potatoes are lightly browned.
4 Now it’s time to add in the onions & green chillies along with a pinch of salt; stir everything together and fry for 2-3 minutes before adding in all your spices and curry leaves.
Adding the Poha and Water:
1 Now that the potatoes & onions are cooked, it’s time to add the flattened rice or poha.
2 Start by adding 2 cups of poha and stirring everything together; cook this on low heat for 5 minutes while using a flat-edged spatula to combine the ingredients.
3 Once done, pour in 1/2, Cup of water and cover the pan with its lid.
4 Cook for another five minutes or until the water has been completely absorbed before serving!
Topping with Garnishes:
1 Now that the Kanda Poha is cooked and ready to be served, it’s time to garnish your plate with all the delicious toppings.
2 Start by sprinkling grated coconut on top and then adding pomegranate arils or currants for a pop of colour.
3 You can also add chopped coriander, mint leaves or even roasted peanuts for an extra crunch!
