This Low Carb Bibingka Recipe is an easier version and baked in the oven. Try this simple and easy recipe that is sure to be a hit with the whole family.
Ingredients required for Low Carb Bibingka Recipe:
1 & 1/2 cup almond flour (finely sifted)
1/3 cup erythritol
One can of coconut milk
1 tsp. baking powder
1/4 tsp. baking soda
One tbsp. yeast
1 teaspoon inulin powder
2 TBSP melted butter
4 organic eggs
2 tbsp. of warm water
How to prepare Keto Bibingka Recipe:
1 In the first step, we have to line cupcakes or mould the baking pan with leaves of banana and grease it with melted butter.
2 Now, preheat your oven to 250F for 2 to 3 minutes only and then turn off the oven.
3 Take a small bowl and add dry yeast, inulin and add warm water.
4 Mix well and leave it for 10 minutes.
5 Now put all the dry ingredients and mix well till well combined.
6 Now we have to add yeast mixture, beaten eggs, coconut milk and melted butter and stir well.
7 Now pour this into the mould and bake it in the oven for 25 to 30 minutes only.
8 Remove from the oven and let it cool.
