If you’re looking for a unique and delicious twist on classic meatloaf, try this keto macaroni cheese stuffed version! It’s a low-carb meal that combines the creamy cheesy goodness of macaroni and cheese with the hearty, satisfying flavour of traditional meatloaf.
Ingredients required for Keto Macaroni Cheese Stuffed Meatloaf:
50 teaspoon Onion powder
1 teaspoon Salt
1 teaspoon Garlic powder
8-ounce American cheese
1/4 cup Mayonnaise
1/2 cup keto sauce
1 cup of cauliflower florets
2cups of broccoli florets
Half a cup of parmesan cheese
2 cloves of garlic
of ground beef
Eggs
Dried oregano
How to Prepare Low-Carb Macaroni Cheese:
To start, prepare the macaroni cheese. Boil 1 cup of cauliflower florets and 2 cups of broccoli florets in 1/2 cup of water until they are soft and cooked through. Then, add in 1/4 cup of cream cheese, 1/2 cup of parmesan cheese, 2 cloves of garlic, and a pinch of salt to the mix. Once everything is combined, use an immersion blender to create a creamy sauce that can be used for stuffing your meatloaf.
1 Form Meatloaf and Stuff with Mac & Cheese:
Once your macaroni cheese is ready, it’s time to form the meatloaf. Mix together 1 lb. of ground beef, 1 egg, and 2 tsp. of dried oregano. Then form the mixture into a large oval shape and make a deep enough hollow in the centre to stuff with your creamy macaroni cheese sauce. Fill the hollow with 1/2 of the sauce before topping off with additional ground beef mix on top and sealing it up as you shape it into a loaf.
2 Bake Soaked in Rich Tomato Sauce:
Place the low-carb meatloaf in an oven preheated to 350F and bake for up to an hour. During this time, every 15 minutes or so you can add some of your favourite tomato sauce over the top of the meatloaf with a brush – this will help keep it moist and add deeper flavour as it bakes. After an hour, check that the internal temperature has reached 165F before cutting into thick slices to enjoy!
3 Finish with a Crispy Topping:
Add the finishing touches to your Keto Macaroni Cheese Stuffed Meatloaf by sprinkling over some grated cheese, followed by a layer of crushed pork rinds or Panko breadcrumbs on top.
