This recipe makes 16 rolls, which can be stored in the fridge for up to a week or frozen for up to 3 months. Enjoy them cold or reheat them in the microwave or oven for a warm and satisfying snack.
Ingredients required for Keto Pepperoni Rolls:
2 teaspoons Dried Yeast
Two teaspoons Inulin
2 tablespoons Warm Water
1 ½ cup Almond flour
2 teaspoons Xanthan Gum
2 tablespoons Salted Butter
3 cups Mozzarella Cheese shredded
1 large Egg
8 ounces Pepperoni thinly sliced
How to prepare Keto Pepperoni Rolls:
1 To start, mix yeast, inulin, and water in a small bowl. Let the mixture sit in a warm place to proof before moving on to the next step.
2 Start by mixing almond flour and xanthan gum in a large bowl.
3 Start by melting some butter and mozzarella in a non-stick saucepan over medium-low heat. Keep stirring until the cheese has fully melted and has a smooth, pourable consistency. Be careful not to let it brown!
4 To start, mix melted cheese with almond flour, proofed yeast, and an egg until a sticky dough forms. For best results, mix by hand while wearing a food-safe glove.
5 The dough needs to be covered with a clean cloth and left in a warm spot to proof for one hour. This allows the dough to rise and become fluffy, creating the perfect base for the delicious pepperoni filling.
6 Start by dividing the dough into 16 equally sized balls.
7 Start by rolling each ball of dough out between two pieces of parchment paper until it forms a round disc that is approximately 6mm/.025in thick.
8 Start by layering slices of pepperoni in the centre of the dough, using 4-8 slices depending on their size. Then, roll up the dough like a scroll, tucking in the sides as you go. Repeat this process with all of the dough balls to create a delicious and satisfying snack or meal.
9 After assembling the rolls with pepperoni and cheese, place them seam side down onto a cookie sheet lined with parchment paper. Then, allow them to rise for 30 minutes in a warm location before baking.
10 Start by preheating your oven to 190C/375F.
11 Simply bake them in the oven for 15-20 minutes until they are perfectly golden brown and puffed up.
12 Once cooled, these rolls make a satisfying and flavourful treat.
