How to Prepare Keto Macadamia Nut Cookies
– Line two large baking sheets with parchment paper, or use silicone baking mats, and set the oven to 325 0 F.
– Take a medium-sized bowl and add almond flour, baking soda, coconut, gelatin, and salt to it. Whisk thoroughly.
– Take a big bowl and beat butter and sweeteners in it until you get a fluffy, uniform mixture. This should take about 2 minutes or so. Beat egg and vanilla extract with the mixture.
– Beat almond flour with the mixture until well combined followed by adding macadamia nuts. Use a rubber spatula to thoroughly mix the latter. Form a consistent dough.
– Divide the dough into 24 equal-sized balls with a diameter of about 1.25 inches. Place them apart on the baking sheets and apply pressure using your hand to reach about 1/2- inch thickness.
– Equally divide the white chocolate chips among the dough balls and place them on the top.
– Bake the keto white chocolate macadamia nut cookies for about 12 to 15 minutes or until they turn golden brown around the edges.
– Remove the cookies from the oven and allow them to cool at room temperature.
– Serve and enjoy!
