Ingredients required for Crispy Vada Pav:

For aloo mixture:

   2, Tsp. oil

   ½ tsp. mustard

  pinch of hing / asafoetida

  Few curries leave

   1-inch ginger (crushed)

   2, Clove garlic (crushed)

   1, Chilli (finely chopped)

   2 tbsp coriander (finely chopped)

   ¼ tsp turmeric/haldi

   2, Potato/aloo (boiled & mashed)

   ½ tsp salt

   1 tbsp lemon juice

For besan batter:

   ¾ cup besan/gram flour

  1 tbsp. rice flour

   ¼ tsp. turmeric/haldi

   ¼ tsp. Kashmiri red chilli powder / lal mirch powder

   pinch of hing / asafoetida

  ¼ tsp. Salt

  ¼ tsp. baking soda

  ½ cup water

  Oil for deep frying

Other ingredients:

   6, Ladi pav/dinner rolls

   7, Green chillies

   6 tsp. green chutney

   3 tsp. tamarind chutney

   3 tsp. dry garlic chutney

How to prepare Crispy Vada Pav:

1    To prepare a delicious Vada Pav, Begin by taking a large ball of spiced potatoes and dipping it in a besan batter until it is fully coated.

2    For making Vada Pav, begin by kneading a dough out of 1/2 cup chickpea flour, 1/4 cup all-purpose flour, 1 Teaspoon ginger-garlic paste, 2 Green chillies, 1 Teaspoon cumin seeds, and salt. Then form small balls of dough and flatten them into patties. Finally, deep fry the patties in hot oil stirring occasionally until golden brown.

3    Start by preparing the chutneys: a green chutney, a tamarind chutney and a dry garlic chutney. Then split open a ladi pav and spread 1 tsp of green chutney, ½ tsp of tamarind chutney, and ½ tsp of dry garlic chutney on the inside surface.

4    Then place it in the centre of a pav (a small bun), and top it with chura (dry puffed rice) and fried green chilli peppers.

5    Finally, press down on the vada pav and serve immediately for the best results!
