1 Almond flour 10 gms
2 Broccio/Ricotta 500 gms
3 Coconut oil 10 gms
4 Eggs (Medium-sized) 6
5 Erythritol 250 gms
6 Lemon 1
7 Salt A pinch
If only big-sized eggs are available, then use 4 instead of 6 eggs for preparing the Keto Corsican Cheesecake. Additionally, don’t dispose of the lemon zest as it is also an important ingredient for preparing the dish.
How to Prepare Keto Corsican Cheesecake (Fiadone Corse)
1 – Preheat the oven to 1800C.
2 – Take a baking pan (a pan with 24 cm diameter is ideal) and grease it with coconut oil. Thereafter, dust it slightly with some almond flour.
3 – Take a container and beat egg yolks with the erythritol. Whisk until the mix turns foamy.
4 – Take another container and whisk the brocciu or ricotta cheese using a fork.
5 – Now put the whisked ricotta cheese into the egg mix container.
6 – Add salt, lemon juice and zest of 1 lemon to the whisked ricotta cheese and egg mixture.
7 – Stir the mixture until it turns into a smooth paste.
8 – Whisk the egg whites until stiff peaks appear in the mixture.
9 – Add the egg whites to the egg yolk mixture using a spatula.
10 – Take the mixture into a baking pan. Bake it for approximately 40 minutes at 1800C.
Note: – If the inside is still a little wobbly after heating the mixture for 40 minutes, heat the mixture for another 10 minutes at 1400C.
11 – Let the cheesecake cool for a few minutes before serving. At last, enjoy having the healthy Keto Corsican Cheesecake with family and friends.
