Today we have a classic brunch special”huevos pizza”. It will leave your tummy happy. I made this pizza ranchero and it turns out amazing. This steak ranchero pizza has few ingredients and is ready in 15 minutes.
Ingredients required for Huevos Rancheros Pizza
2 tablespoon olive oil
1 onion
2 cloves of garlic
1 jalapeño pepper
3 ripe tomatoes, diced with their juice 1/2 teaspoon ground cumin
2 large flour tortillas of choice
4 eggs
1/4 cup Mexican cheese blend
One avocado, diced (optional)
1/4 cup fresh coriander leaves to garnish
Greek yoghurt to serve

How to prepare Huevos Rancheros Pizza
1 In the first step preheat your oven to 180C.
2 Take a large pan over medium heat and add two tablespoons of olive oil when heated up the oil add onion, garlic, and jalapeño. Cook till onion becomes transparent or garlic and jalapeño become softly.
3 Now add the crushed tomatoes and cover the pan and keep the heat low till tomatoes become juice and add salt and pepper accordingly.
4. Lightly grease a baking tray or line with parchment paper.
5. Now place the 2 tortillas on top of each other onto the tray.
6. Now pour the tomato salsa over the top and create 4 ‘holes’ in the salsa for the eggs to sit.
7. Carefully beat the eggs into these holes. Spritz the pizza top with shredded cheese and place it into the oven.
8. Bake it for 10-15 minutes or till the egg whites begin to whiten
9. Now we have to change the oven settings to the grill and let it cook for 5 minutes.
10. Top with fresh coriander leaves or Greek yoghurt or avocado slices optional.
