 Half a cup of sour cream

Two large eggs

 Half a tablespoon of garlic powder

 1/2 a tablespoon of onion powder

 Half teaspoon salt

 Half a teaspoon of pepper

 One stock butter

 Two teaspoons of xanthan gum

 Two cups of chicken broth

 Five cups of riced cauliflower

 Three cups of pre-cooked chicken

 Three ounces of crushed pork rinds

 One-fourth cup of parmesan cheese

How to prepare for Keto Cheesy Chicken and Rice Casserole?

1   Initially, you need to preheat the oven to 350 degrees Fahrenheit and lightly grease the casserole dish.

2  Now, take a small bowl and whisk the sour cream, eggs, garlic powder, onion powder, salt, and pepper. Now, set it aside.
3   Take a large skillet and melt the whole butter over a medium flame.

4   Whisk in the xanthan gum and stir it constantly until the mixture turns out to be golden brown. It will take around 5 minutes. You must watch it carefully as it can burn easily. Now, whisk the chicken broth also.

5    Now, you must allow the sauce to churn and thicken for about a few minutes more. Now, remove it from the heat and let it cool in a slight way. You can now stir the riced cauliflower into the sauce mixture and combine it.

6   Now, add the cauliflower, cooked chicken, ground pork rinds, Parmesan cheese as well as sour cream mixture to the casserole dish. Mix it well to combine.

7   Now, combine the remaining pork rinds and the reserved Parmesan cheese and you can also sprinkle it over the top of the casserole.

8   Simmer it at 350 degrees for around 60 minutes or until the top of it gets golden brown.
