Gather Your Ingredients:  Vegan Tofu Tikka Masala

Before you get started, make sure to have all the ingredients on hand. For this dish, you will need one package of organic extra-firm tofu, ground cumin, garam masala, turmeric, olive oil, diced tomato (or canned diced tomatoes), green bell peppers (diced), red onion (diced), garlic cloves (minced) and fresh cilantro leaves. You will also need coconut cream or vegan full-fat yoghurt for a creamy sauce base – both work great in this dish!

Prepare the Tofu Tikka Masala Sauce:

Begin by heating a pan over medium-high heat and adding the olive oil. When the oil is hot, add in the onion and cook for about 3 minutes until it starts to soften. Then, add in the garlic, cumin, garam masala and turmeric and let cook for 1-2 minutes. Next up add in the diced tomato (or canned diced tomatoes) with 1/4 cup of water and let it simmer over medium-low heat until slightly thickened, stirring often – about 10 minutes. Finally, stir in your coconut cream or vegan full-fat yogurt until combined with all of the other ingredients, taste and adjust seasoning as needed!

Cook and Season the Tofu:

After prepping the vegetables and sauce, you’ll need to cook and season your tofu. Begin by draining the block of firm tofu and pressing it with a spoon or paper towel to get rid of as much liquid as possible. Then, heat a non-stick skillet over medium heat and add in some olive oil. Once it’s hot, add in your block of tofu (which will be crumbled into pieces) and fry until golden – about 5 minutes per side. Now you can add any spices you’d like to give the tikkas an extra punch such as chilli powder, paprika or cumin powder! Cook for another couple of minutes before transferring all the cooked ingredients into the saucepan.
