The flavours of this dish vary from region to region, but it is most commonly spiced up with Kashmiri red chillies and the flavour-packed Masala mix from Rajasthan. Serve this hot and spicy curry with steamed whole wheat parathas or jeera pulao on the side for a delicious meal.

Ingredients required for Flavourful Mutton Red Meat:

10 Kashmiri dry red chillies, soaked in water for at least 20 minutes

500 grams of Mutton, cut into 1-inch pieces

1/2 cup Curd Dahi/yoghurt

1, Teaspoon Cumin seeds (Jeera)

2, Teaspoons Cumin powder (Jeera)

2, Teaspoons Coriander Powder (Dhania)

1/2, Teaspoon Turmeric powder (Haldi)

2, Tablespoons Ginger Garlic Paste

Ghee, as required

2 Brown cardamom (Badi Elaichi)

3 Cardamom (Elaichi) Pods/Seeds

1-inch Cinnamon Stick (Dalchini)

3 Cloves (Laung)

1 Bay leaf (tej patta)

3 Onions, finely chopped

1/2 teaspoon garam masala powder

Salt, to taste

Coriander (Dhania) Leaves, a Few sprigs, chopped for garnish

How to prepare Flavourful Mutton Red Meat:

1    To make Rajasthani Laal Maas, the traditional type of Indian-style mutton curry, start by boiling a mixture of water, Kashmiri red chillies, cumin seeds, black cardamoms, green cardamoms, cinnamon sticks, cloves and bay leaf in a heavy-bottomed pan. Once that is done, you can proceed to add the Mutton & other ingredients to create the delicious dish.

2   Let it cook until the meat becomes tender and the chillies have softened.

3   Once the Mutton has cooled a bit, keep the water in which it was cooked and use a mixer grinder to grind all the spices into a fine paste.

4    In a large bowl, combine Mutton, yoghurt, cumin powder, coriander powder, turmeric powder, one tablespoon of ginger garlic paste and the dry red chilli paste that was prepared earlier.

5    Combine all ingredients to form a marinade and allow the mutton to marinate in the refrigerator for an hour before cooking.

6    In a heavy-bottomed pan, heat some ghee. Add some chopped onions to the pan and sauté until they turn a light brown colour.

7   Stir in the remaining ginger garlic paste and cook for one minute.

8   Heat the pan and add the marinated mutton together with the onions. Sauté for two to three minutes on high heat.

9   Cook for a few minutes, shielding with some of the water that was used to boil the dry red chillies.

10   Place the pan with the mutton over medium heat, cover it with a lid and allow it to simmer for 20 to 25 minutes. For a thin consistency, you can add some more water.

11   Once it has cooked, get a piece of charcoal & light it. Place the lit charcoal in a small metal bowl, then put the bowl in the middle of the pan to allow the flavours to infuse.

12   For a delectable mutton dish, Start by adding two to three cloves to the coal. Pour ghee over the top and quickly cover the pan with a lid. Let it sit for two to three minutes before serving up your savoury mutton dish.

13   Put the mutton curry back on the heat, and sprinkle in some garam masala. Give it a quick stir before removing it from the heat. Once done, remove the charcoal bowl for the final touch.

14   Serve up this delicious mutton dish in a bowl and garnish it with fresh coriander leaves.

15   Rajasthani Laal Maas is a popular dish made with mutton & spices, typically served during special occasions and festivals in the state of Rajasthan. It is best enjoyed with hot Phulkas, steamed rice or Baati.
