Not only is this Keto Blueberry Cream Cheese Coffee Cake delicious, but it’s also easy to make. All you need to do is prepare the cake mix according to the package instructions, & then pour it into a greased spring form pan. Then add your blueberries and cream cheese toppings and let it bake for about an hour or until golden Brown on top. Ingredients required for KETO BLUEBERRY CREAM CHEESE COFFEE CAKE:
Cream Cheese Layer
4, Oz. very soft room temperature cream cheese
2 TBS of very soft room-temperature butter8 grams vanilla extract (2 tsp.) adjust to taste
42 Grams of powdered sweetener of choice (1/3 cup), more if needed. I use powdered monk fruit/allulose blend
1 119 grams of coconut flour (17 TBS)
2 100, Grams granulated sweetener of choice (1/2 cup) adjust to taste. I use granulated monk fruit sweetener
3 1/4 tsp. salt
4 15 grams baking powder (1 TBS)
5 4, large room-temperature eggs
6 1/2 cup butter, melted and cooled
7 120 grams room temperature plain yoghurt or sour cream (1/2 cup)
8 8 grams vanilla extract (2 tsp.) adjust to taste
9 150 grams of fresh blueberries (1 cup) adjust to taste
Streusel Topping (optional)
1 14 grams of coconut flour (2 TBS)
2 24 grams brown sugar sweetener of choice (2 TBS). I use brown monk fruit sweetener
3 2 TBS of very soft room-temperature butter
How to prepare KETO BLUEBERRY COFFEE CAKE:
Preheat oven to 350 degrees Fahrenheit and prepare an 8 x 8-inch baking pan with parchment paper. Make sure the parchment is big enough so that it hangs over the side of the pan for easy removal once the Keto Blueberry Cream Cheese Coffee Cake is baked.
Cream Cheese Layer:
1 For this Keto Blueberry Cream Cheese Coffee Cake, begin by beating together the cream cheese and butter in a medium mixer bowl on medium speed for about 1 minute or until the mixture is nice and smooth. Make sure to scrape down the sides of the bowl as needed.
2 Start with a mixer on low, gradually adding in your powdered sweetener until it’s fully incorporated. Increase speed to medium and beat for 30 seconds until smooth. Don’t forget to stop and scrape down the sides of the bowl if necessary, then set it aside.
1 In a bowl, combine all the Keto Blueberry cream cheese coffee cake dry ingredients and mix until there are no lumps.
2 In a bowl, mix the eggs & dry ingredients until everything is evenly moist. Add in the butter, yoghurt, and vanilla and stir with a spoon until you have formed a smooth batter.
3 Scrape down the sides and form the mixture into a dough ball. Massage the ball with your hands to ensure it is moist and holds its shape well.
4 Begin by taking the prepared dough and shaping it back into a ball. Using a wooden spoon, gently break it up and slowly add the blueberries, folding them until they are evenly dispersed within the dough.
5 To make Keto Blueberry Cream Cheese Coffee Cake, knead the dough until it forms a ball, & then divide it into two. Place one portion into a greased cake pan and press it out evenly to form the base layer.
6 Start by scooping out 1 TBS of the cream cheese mixture and spread it evenly on the dough in the pan. Use a spoon to make sure that the cream cheese is evenly spread out on the dough.
7 To create your cheese coffee cake, start by spooning the remaining dough over the cream cheese mixture. Press firmly to make sure the cream cheese is fully covered, and if there are any cracks in the dough, get a few drops of water on your fingers and rub them together to smooth it out!
Streusel Topping (optional)
1 For the KETO CAKE topping, Simply mix all the streusel ingredients in a small bowl until it’s a smooth dough-like texture. Then use your fingers to break the streusel into small pieces and sprinkle it evenly over the top of the coffee cake.
2 Preheat your oven to 350 degrees, then place the Keto Blueberry Cream Cheese Coffee Cake into the oven and allow it to bake for 25-30 minutes until golden. After that is done, remove it from the oven and let cool in the pan for at least 1 hour before serving.
3 To serve this Cheese Coffee Cake, gently lift the cake out of the pan by holding onto the overhanging parchment paper. Place it on a wire cooling rack and let it cool for a few hours before cutting it into slices. Enjoy!
