For the Muffins:

 5 Eggs

1/2 cup coconut oil melted or use liquid coconut oil

 2 Tablespoons butter

 1 cup pumpkin puree

 One Tablespoon + 1 teaspoon of pumpkin pie spice

 1 1/2 cups lakanto monk fruit powdered

 1 1/2 tsp. vanilla

Half cup +2 tablespoons coconut flour

1/2 tsp. salt

 1 1/2 tsp. baking powder

For the Filling: Keto Pumpkin Muffins

 3 oz. Cream cheese room temperature

 One Tablespoon of heavy whipping cream

 1 1/2 tablespoons lakanto monk fruit powdered

 1/2 teaspoon vanilla extract

How to prepare Keto Pumpkin Swirl Muffins:

1. Take a pan and melt coconut oil and butter.

2. Take a bowl and add beaten eggs, lakanto monk fruit powdered, pumpkin puree, vanilla, and pumpkin pie spice and mix it well till well combined.

3. Add coconut oil and butter into the mixture and mix well.

4. We have to add coconut flour, salt and baking powder to the ingredients & mix it well and set it aside.

5. For the filling, take a small bowl & add the filling ingredients and mix it well tills well combined.

6. Grease the muffin tin with cooking spray and fill a muffin tin with batter.

7. With the help of a scoop’ add half a teaspoon of cream cheese filling mixture on top.

8. Bake at 350 degrees F for 15 to 18 minutes or till the toothpick comes out clean.

9. Enjoy!
