These mini Meatloaf taste like pizza! This recipe is simple to prepare, low carb and meatloaf filled with a melted cheesy centre and topped with tomato glaze.

 Ingredients required for Mini Meatloaf Low Carb

2 pounds of ground beef, I use 85% lean

1 tablespoon olive oil

1 large onion, diced

4 cloves of garlic, grated or finely minced



1 cup almond flour

1 cup true made food ketchup, divided

1 bunch of parsley, finely chopped

2 eggs

2 teaspoons kosher salt

2 teaspoons pepper

How to prepare Keto Mini Meatloaf Muffins:

1    Firstly we have to preheat our oven to 350f.

2   Then grease the muffin pan with melted butter.



3    Take a large skillet over medium-high heat and add olive to it.

4    When heated up the oil add chopped onion, garlic and a pinch of salt in it.

5    Then cook it for 4 to 5 minutes till onions are softened.

6   Take a large bowl and add ground beef, cooked onion mixture, almond flour and half a cup of the truth made food ketchup, parsley, beaten eggs, salt and according to taste.

7   With the help of a spoon fill each muffin pan. Flatten down it with your hands and completely fill the muffin pan.



8   Top the meatloaf with ½ cup of truly made food ketchup.

9   Bake it for 20 to 25 minutes till toothpick comes out clean and allow cooling for 5 minutes before removing from muffin pan.

10   Serve and enjoy!
