Gather The Necessary Ingredients:

The ingredients you will need to make Sabudana Khichdi are sabudana, potatoes, peanuts, green chillies, cumin seeds, black pepper powder and lemon juice. You can also add other vegetables like carrots and peas if you want. Make Sure all the Ingredients are cut into small pieces before starting with the recipe.

Soak the Sabudana in Water for a Few Hours:

The first step to making Sabudana Khichdi is soaking the sabudana in water for at least a few hours (or overnight) before using it. This ensures that the sabudana is soft enough to cook easily. Drain the water after a few hours and keep it aside until you start cooking. This step helps in making the end product more delicious and easier to digest.

Heat Oil and Fry the Peanuts Until Crispy:

Heat some Oil” in a pan over medium-high heat and add the peanuts for frying. Stir continuously for around 5 minutes until the peanuts are golden brown and crispy. Remove from the heat and transfer to a bowl lined with a kitchen towel to soak up any excess oil. Save these fried peanuts for later use as a garnish on the sabudana khichdi.

Add Seasonings to the Mixture:

Now, you can add seasonings to the mixture. Start by adding 3 Tablespoons of ghee to the pan and let it melt. Once the ghee has melted, add mustard seeds, cumin seeds, grated ginger, green chilli and curry leaves. Stir everything together and let the ingredients cook for about 30 seconds or until fragrant. Finally, sprinkle in some salt to taste and mix everything.

Fry the Sabudana Pearls in Oil Until Light Golden Brown:

Now ready to start cooking the sabudana pearls. Begin by adding oil to a clean and dry pan and heat it on medium flame. Once the oil is hot, add the drained and washed sabudana pearls to it. Fry the pearls for about 5-6 minutes or until they are light golden brown. Take care not to stir too much, as this can make them stick together and become clumpy. When done transfer the fried sabudana onto a plate lined with absorbent paper.
