   3 cups all-purpose flour – or spelt

   ¾ cup Wholemeal Flour – or whole spelt or more all-purpose white flour or oat flour

   1 ½ teaspoon baking soda

   ½ teaspoon Salt – optional, can be made salt free

Vegan buttermilk

   2 tablespoons Apple cider vinegar – or lemon juice or any vinegar

   1 ¾ cup + 2 tablespoons Soy Milk – or oat milk or almond milk

To knead the bread

4-6 tablespoons of All-purpose flour

How to prepare Vegan Irish Soda Bread Recipe:

1    Firstly preheat your oven to 220C.

2    Take a baking tray and add parchment paper to it and grease it with melted butter.

3    Take a medium size bowl and add soy milk with apple cider vinegar and mix it well and set it for 10 minutes till it thickens.

4    Take another bowl and add flour, baking soda and a pinch of salt and whisk it well till well combined.

5    In the centre make a well and pour the vegan buttermilk.

6    Stir this dough with a spatula and then knead it with your hands and make a smooth ball.

7    Knead the dough for at least 1 to 2 minutes till it makes a smooth ball.

8    Make sure the dough results will be moist, elastic bread.

9   Transfer this dough to a prepared baking tray and flatten the dough.

10   On top of the bread add white flour.

11   Bake it at 220C for 15 to 20 minutes or till the outside is crunchy.

12   Move this into the cooling rack for 1 hour before slicing.

 Storage:

We can store this bread for 3 to 4 days on a clean towel to keep it moist.
