Ingredients required for Keto dried cranberry pound cake:

  2 and a half cups almond flour

  1 cup of coconut flour

¾ cup unsalted butter

5 eggs, room temperature

8 ounces of cream cheese, room temperature            

1 and ¼ cups of erythritol powder for sweetener

One teaspoon of vanilla extract

1/2 teaspoon of orange extract

2 teaspoons of baking powder

1/4 teaspoon of sea salt

 3/4 cup of heavy whipping cream

12 ounces of fresh or frozen cranberries

 1 tablespoon of fresh orange zest

  Half cup confectioner sugar substitute

  4 ounces of full-fat cream cheese

1/2-3/4 cup heavy whipping cream

  1/2 teaspoon of vanilla extract
  Pinch of salt

How to prepare Keto Cranberry Pound Cake recipe:

  1  Firstly, we have to preheat our oven to 200C.

 2  Grease with melted butter 12 cup bund pan.

3  Now we have to sift the almond flour and set it aside.

4   Take a bowl and add coconut flour, baking powder and salt.

5  Now we have to add sifted almond flour and mix well till well combined.

6   Take a large bowl and add cream cheese, vanilla extract, butter, orange extract, orange zest and sugar substitute and mix well with the help of an electric mixer till fully combined light and fluffy.

 7  Now we have to add beaten eggs and mix well.

 8  Now slowly add dry ingredients and mix with an electric mixer till well combined.



9   Next, we have to fold it into the heavy cream.

10   At last, we have to fold into raw cranberries.

11   Now put the batter into the prepared bundt pan.

12   Bake it for 40 to 45 minutes or till the toothpick comes out clean.

13   Now we have to allow the cake to cool down fully.

14   Now pour the icing over the cake and spread it carefully.

 Keto Vanilla Icing:

1   Take a bowl and add cream cheese and add confectioner’s sugar substitute and with the help of an electric mixer or hand mixer mix well till well combined.



2   Now add heavy whipping cream, vanilla extract and a pinch of salt.

3   We can add heavy cream if the icing is too thick.
