Ingredients required for Keto Red Velvet Cupcakes Recipe
100 grams of almond flour
Hundred grams butter
100 grams of erythritol (powdered)
100 ml buttermilk
50 grams of coconut flour
20 grams cocoa powder (unsweetened)
● Salt as per taste
● Some drops of red food colour
1 teaspoon vanilla extract
1/2 teaspoon baking powder
Half teaspoon baking soda
1/2 teaspoon vinegar
1/2 teaspoon xanthan gum [Optional]
Cream Cheese Frosting:
1 200 grams cream cheese [room temperature]
2 100 grams butter [room temperature]
3 50 grams erythritol (powdered)
4 1/2 teaspoon vanilla extract

You can substitute buttermilk with almond milk, coconut milk, heavy cream, or sour cream.
Instead of erythritol, you can use stevia.
How to Prepare Keto Red Velvet Cupcakes Recipe
1 – Set the oven to 320 0 F and line a baking or muffin tray with 10 divisions and the same number of cupcake liners.
2 – Take a large mixing bowl and sift the cocoa powder and coconut flour in it. Next, add almond flour, baking powder, baking soda, xanthan gum, and salt to it.
3 – Take another bowl and add butter to it. Microwave the same for about 30 to 45 seconds or until the butter melts.
4 – Add erythritol, vanilla, and vinegar to the bowl with melted butter and beat the mixture using an electric beater. Now, add buttermilk, eggs, and food colour, one by one, and mix.
5 – Add all the ingredients to the large bowl and continue whisking until you get a smooth batter.
6 – Divide the batter evenly into 10 divisions and pour it into the baking tray or muffin tray.
7 – Bake the cupcakes for about 20 to 25 minutes or until they are fully cooked. This will happen when a toothpick inserted comes out clean. Set the cupcakes aside and let them cool.
Cream Cheese Frosting: Keto Red Velvet Cupcakes Recipe
1 – Take a bowl and add all the cream cheese frosting ingredients to it. Use an electric beater to form a uniform mixture.
2 – Pour the cream cheese frosting into a piping bag and add it on top of the cupcakes.
3 – Store the cupcakes in the fridge for about 2 hours before serving.
Note: Before applying cream cheese frosting to the cupcakes ensure that they have cooled down completely.
