Ingredients required for Low Carb Tortilla Recipes:
1 1/2 lb. cauliflower (florets only – about one large head)
3 large eggs
3/4 cup Mozzarella cheese (shredded)
1/2 tsp. sea salt
1/2 tsp. xanthan gum
SPICY LOW-CARB QUESADILLA SAUCE:
6 tbsp. Mayonnaise
2 tbsps. Jalapenos in water (from a jar, minced, with liquid included – equivalent to 2-3 slices + liquid)
3/4 tsp. paprika
1/2 tsp. garlic powder
Cayenne pepper (to taste)
CHEESE FILLING:
1 1/2 cup cheddar cheese (shredded)
How to prepare Low Carb Tortilla Recipes:
1 First we have to preheat our oven to 400 degrees F.
2 Take a baking sheet and add parchment paper to it.
3 Take cauliflower florets and add them into the food processor and blend it till they are the consistency of rice.
4 Move it into a large bowl and microwave it for 8 to 10 minutes till it cooks well.
5 Now let it cool down.
6 Now transfer it to a clean towel and squeeze it well.
7 Make sure it should be dense and clumpy.
8 Then place this cauliflower into the food processor and add beaten eggs, mozzarella and salt in it and blend it till it turns smooth.
9 Drop the cauliflower mixture into the lined baking sheets and into six areas.
10 With the help of a spatula spread into thin circles.
11 Bake it for 5 to 10 minutes or till the edges are golden brown.Flip over and bake for another 4 to 5 minutes.
12 Let it cool down.
LOW CARB QUESADILLAS
1 To make sauce we have to mix all the ingredients into a small container.
2 With the help of a tablespoon spread sauce over the tortilla.
3 Sprinkle cheddar cheese on top.
4 Take a non-stick pan over medium-high heat and add folded QUESADILLAS into the pan and flip it to cook on the other side.
