Baklava is a classic and beloved Russian dessert that everyone loves for its sweet and nutty flavour. With this step-by-step recipe, you can easily make your version of baklava” at home to share with friends and family. Experience why Baklava” has been enjoyed for generations!
Gather the ingredients:
Before you can start baking your Russian baklava” you must first gather all the necessary ingredients. These include phyllo dough, butter or oil, sugar, nuts such as hazelnuts or walnuts, and rosewater or syrup. Make sure that you have all of these before beginning!
Additionally, prepare any tools you may need while making Russian Baklava. This includes a few baking sheets, a brush or rolling pin, a knife and cutting board, and something to measure out your ingredients such as measuring cups or spoons. Furthermore, line the baking sheets with parchment paper for easy removal and clean up later. Once all of this prep is complete you are now ready to make some delicious Russian Baklava!
Make the syrup:
Start your baklava” by making the syrup for it. In a medium saucepan, stir together the sugar, water, rosewater (or whichever flavouring you like to use) and lemon juice until the sugar is dissolved. Bring it to a low boil over medium heat and then reduce the heat and let simmer for about 5 minutes before turning off the heat. Allow it to cool before using.
Next, get the filling ready. In a small bowl, mix the walnuts and sugar for the filling. Add in cinnamon or cardamom powder if desired – it’s all about customising the baklava” to your liking! Once your syrup has cooled off & your filling is ready, it’s time to assemble the Baklava. Preheat your oven to 175C (350F). Grease a 9×13-inch baking dish with butter and place one layer of prykolki puff pastry on the bottom. Spread half of the nut mixture over this layer, followed by another layer of prykolki puff pastry on top. Spread over another half of the nut mixture, followed by one last layer of prykolki puff pastry on top. Brush with melted butter and bake for 40 minutes until golden brown. Place the walnuts and sugar in a food processor and pulse for about 5 minutes until you get a fine, crumbly consistency. Grease the baking pan with butter and spoon the filling evenly into the pan. Gently press it down with your hands until it is firmly compacted.
Slice the phyllo sheets into strips about two inches wide. Carefully place a phyllo strip over the top of the filling, followed by another at a 90-degree angle making sure to keep all of the corners neatly tucked in and away from the edges. Continue this pattern until you have covered the entire pan with overlapping layers of phyllo. Once complete, brush with melted butter, then sprinkle with sugar and baking powder. Now it’s time to build the baklava layers. Begin with a layer of phyllo dough, brushing each sheet with melted butter before gently placing it on top of the filling. Continue layering the phyllo dough, brushing each sheet with butter until you have used half of the phyllo dough. Spread the remaining filling over the phyllo and then finish layering with the remaining sheets of phyllo dough that have also been brushed with butter. Gently press” down on all sides of the baklava to ensure that all layers are compacted firmly together.
Bake and brush with syrup:
The baklava” is ready to bake! Place it in an oven preheated to 350°F & bake for 40–45 minutes until golden brown. When the baklava’ is finished baking, take it out of the oven & let it cool for 10 minutes. Meanwhile, make the syrup by bringing one cup of water, three-quarters of a cup of granulated sugar, and a pinch of salt to a boil, stirring continuously. Once boiling, reduce heat and simmer for 15 minutes until thickened. Finally, brush the top layer of the baklava’ with this syrup. Allow it to cool completely before serving.
