Palak/Spinach:
Palak or spinach is a leafy vegetable which is enjoyed all over India. It’s known in English as Spinach, while in Hindi it’s referred to as Palak. This dark green vegetable is full of essential vitamins and minerals. Spinach is usually sautéed with onions and garlic for a quick side dish, added to curries or incorporated into soups for a delicious flavour and nutrition boost.
Paneer/Cottage Cheese:
Paneer, also known as cottage cheese, is a firm cheese which is used mainly in Indian dishes. It’s made from curdling heated milk with vinegar or lemon juice and pressing it into cakes. English speakers may refer to this delicious ingredient as cottage cheese, while Hindi speakers know it as paneer. In its traditional form, paneer is enjoyed crumbled on top of salads, fried for bhaturas, grilled in tikkas or stuffed inside parathas.
Gobi/Cauliflower:
Gobi or cauliflower is one of the most popular vegetables in India and is used in a variety of dishes. It’s dark green in colour and has small, tightly-packed florets with a flavour that’s mild and slightly sweet. In Hindi, cauliflower is referred to as gobi, which is derived from a Sanskrit word meaning “flower bud”. Cauliflower can be cooked in numerous ways such as steaming, frying, stir-frying, roasting, or simply boiled and consumed raw.
Bhindi/Ladyfinger:
Bhindi or ladyfinger is a slimy vegetable that is popular in both North India and South India for its distinctive taste. The English name for this vegetable is “lady finger” and it belongs to the mallow family. This green, annual vegetable has pointed tips and ridged pods containing tiny white inedible seeds. Okra can be cooked in a variety of ways such as steaming, boiling, baking, sautéing, or frying. It can also be eaten raw with yoghurt or served as an accompaniment to many dishes.

This is an essential ingredient in almost every Indian dish. Use it to make gravies and curries, as well as provide flavour and texture to dishes like bhaji or chutney. Harvested onions can last a few months if stored properly in a cool dry place.
