1 – Take a large pot and fill it with some cooking oil
2 – Put the pot on medium heat and warm the oil
3 – Add onion and sprinkle salt
4 – Cook for 3 minutes until the mix turns translucent
5 – Add carrot, garlic and ginger to the mix
6 – Continue cooking the mix for about 5 minutes
7 – Add coconut milk, curry paste and water to the mixture and bring it to a boil
8 – Stir in the broccoli, cauliflower and potato in the mix
